Bo Ssam - Slow Cooker Korean Pork Wraps
Bo Ssam is a true family style meal. It is served in the middle of the table and everyone creates their own custom bundles of pork and toppings all wrapped in a leaf lettuce or salted cabbage. The toppings can be extensive, so you choose how simple or abundant you want to go. When we are really going for it, we'll get out the sliced garlic, fresh chiles, perilla leaves, spicy radish salad (musaengchae), Bo Ssam sauce (ssamjang), salted shrimp (saeu-jeot), and fresh oysters. You can add some rice to your bundle, but I prefer to save room in my stomach and stuff mine with as much pork and toppings as possible. That's how I roll.
Again, you can totally simplify the fillings to just pork, ssamjang, and your choice of wrapping (lettuce or cabbage), since the pork is so delicious and tender on its own. Because this is done in the slow cooker, the pork belly may fall apart when you try and cut slices. Don't worry. Just embrace this slow cooker method and shred the pork into bite sized pieces if it turns out that way. If you're' like me, you'll make the pork in the slow cooker so that you can utilize the time by going bonkers on getting all your toppings together.
